Chicken is exactly as one might expect: the cut of meat that is the thigh of chicken! I like to use chicken thighs in my recipes for multiple reasons. For one, I think the richer, more flavorful chicken thigh (compared to a breast or other cut of chicken) makes for better-tasting food! While some have concern about the fat content of chicken thighs, I know that the pasture-raised chicken fat is a good source of fat-soluble vitamins (another reason to use thighs over breast!). Tons of my recipes have included chicken thighs, but one of my favorites include my Thai Green Curry.
