AIP Batch Cook is a new program from Mickey Trescott of Autoimmune-Paleo that walks you through planning and cooking all of your meals for one full week on the autoimmune protocol! It is designed to feed one person on the strictest phase of the autoimmune protocol (as detailed in The Paleo Approach) and is divided up into two batch cooking sessions, one that is 2 1/2 hours long and one that is 1 hour long (for a total cooking time of 3 1/2 hours for the whole week!). Each session includes a step-by-step video tutorial and a beautifully-designed downloadable PDF with the meal plan, grocery lists, recipes, and tips for preparing to batch cook, shopping for ingredients, managing your time in the kitchen, making substitutions for additional dietary needs you may have, storing and reheating your food after it’s made, and an overview of the tools you will need to get started.
In the first session, Mickey walks you through preparing the meals for the first four days of the meal plan which includes dishes like chicken soup, roasted root vegetables, and ginger-lemon salmon. Although this session requires 2 1/2 hours, one hour of that is passive cooking time during which you can take a break or get a head start on the dishes. In the second session, Mickey walks you through the meals for the second half of the week, which includes dishes like a beef breakfast skillet, cabbage salad, and pork chili. In addition to the food prep, cooking, and storage tips you will find in both videos, both videos are also sprinkled with tidbits on health and nutrition like the benefits of seafood and saturated fats, how to source high-quality protein, and how to manage your time and multitask in the kitchen! As someone who struggles with keeping track of more than one thing at a time, I tend to make a lot of one-pot meals like stir-fries, soups, and salads. But with Mickey’s calm demeanor, helpful tips, and the fact that you are cooking along with her at the same time, batch cooking seems far more straightforward and simple than you might have imagined!
