Seafood Leek Soup

I was craving cioppino right when I was giving up nightshades.  So, I improvised this seafood soup and it was so delicious I just had to share it with you.  You could use whatever seafood you happen have on hand.  I had a bag of Trader Joe’s frozen mixed seafood, which was composed of shrimp, calamari rings, and scallops.  You could also use mussels or clams (in the shell would be very pretty!) like a traditional cioppino.  I thought this was very tasty with chicken broth, but if you happen to have fish stock around, that would be even better!

Seafood Leek Soup

1.     Bring broth to a boil over high heat, then lower heat to keep a rolling simmer.
2.    Add seafood, fish and leeks to broth.  Cook until seafood is completely cooked and leeks are soft, about 15-20 minutes.
3.    Add wine, parsley and salt.  Cook another 5 minutes.  Serve!

I made this for supper. It was great! I used shrimp and talapia. I added some left over Green beans and used Chardonnay wine. My husband and I liked it, our daughter thought it had a slight fishy flavor but I didn’t think so. Thanks for the recipe!

Thank you! I will be adding this to my recipe list! I LOVE cioppino, but have recently realized that I’m going to need to part ways with nightshades. My husband and I just talked about this a day or so ago!

Would apple-cider vinegar work in place of the wine? I’m asking because I have no wine on hand and I’m eager to try this recipe!

Inspiring! Have been craving seafood stew for weeks now, and frequently turn to the TJ frozen mixed seafood for a quick seafood meal. Had not thought to use some of my bone broth to cook it in, and then add a few more goodies. THANK YOU!!! 🙂

Made this today, so simple but so good, can’t believe how easy and tasty it was. I added some chopped garlic too.

Delicious… I added coconut milk when I added the wine. I used shrimp, halibut and scallops. Most “expensive soup” ever but cant wait to make it again!

As I’m doing a Whole 30 I can’t have the wine, any substitutes you can suggest or should I just add more chicken broth. Thank you for a great and informative web site. You put me onto the Whole 30 and it’s changed my life!
