watermelon-mint-granita-198x300I know this watermelon mint granita is so simple that it’s not really a recipe, but in its utter simplicity, it really is one of the best frozen desserts I’ve ever tasted! Incredibly easy to make and deliciously refreshing, it’s perfect for those ridiculously hot summer days!

Sweet, juicy, ambrosial watermelon is blended with fresh, tingly mint and frozen before being flaked into thin, fragile ice shards with a fork to create a light, flavorful treat packed with taste. It’s easy, impressive, and only requires a few minutes of hands-on time – the perfect summer treat!

Since there are only two ingredients, make sure your watermelon is very ripe and juicy and your mint is very fresh for the best result. I used a mixture of applemint and spearmint for mine because it’s what I have growing in my garden, but you could use any type of mint you want!  Thank you so much to Sarah for having me guest post today, and I hope everyone enjoys this recipe!


  • 6 cups watermelon, diced
  • ¼ cup fresh mint
  1. Puree the watermelon with the mint in a food processor until completely smooth.
  2. Place the mixture in a shallow dish, cover with clingfilm, and freeze for 30 minutes.
  3. Scrape the edges of the mixture with a fork, then return the dish to the freezer.
  4. Repeat this mixing and breaking up of any ice crystals using a fork every half an hour for about 3 hours, then serve immediately, garnished with a sprig of fresh mint.
  5. Enjoy!
