Hi there. I can’t thank you enough for all the information and helpful tips and recipes you provide. About a year ago, I went to hear a presentation by Dr. Peter Osbourne, and I thought you would find his research helpful. He basically says that ALL seeds/legumes/grains and nightshades (and of course processed anything) should be avoided, period. It makes sense from the seed protein perspective that that is what sets off your immune reaction, and that all such foods have a form of gluten (that is causing continued gluten reaction even after wheat gluten is long eliminated). So, the seed quality protein is the gluten causing the reaction in traditionally “GF” grains. Anyway, I hope what I am saying makes sense – google this guy and he explains it better (obviously, ha).
