TPM Tidbit: A New Paleo Cookbook for Me To Review

I am in the process of reviewing a new paleo cookbook: Weeknight Paleo by Amber Beam. I am so inspired flipping through the book, choosing which recipes I will cook for my family.
I love the layout of the book, which is very unique. Amber lays out nine weeks of recipes, each week consisting of four complete meals that are quick, easy and look delicious! Some of the meals are standalone quick meals while others include ingredients that are leftovers from a previous recipe cooked that week (the previous recipe is purposefully made in a large quantity to accommodate this). This is a great way to cook when crunched for time and Amber is very creating in the way she reinvents leftovers. The idea is that you would shop for your week’s worth of meals on the weekend (Amber includes a shopping list for each week) and then know what you are going to cook all week. You could easily swap out some of the standalone meals from one week to another. Either way, it takes much of the effort of meal planning for a busy week
I am also finding a suitable subset of recipes that are autoimmune-friendly or easily adapted for the extra restrictions of the autoimmune protocol (maybe one quarter of the recipes?). Look for my full review of this book in the next couple of weeks!
