“Cream” of Broccoli Soup

This simple soup combines the health benefits of bone broth, the cruciferous broccoli with all of its vitamins, minerals and antioxidants, and the good monounsaturated fats of avocado. Plus, it’s delicious! This makes a fairly thick, hearty soup. If you prefer cream of broccoli soup a little thinner add an extra ½-1 cup bone broth. Serves 2-3.
Ingredients:
- 2 cups bone broth
- 1-2 large “Heads” of Broccoli (about 4 cups of florets and stems)
- 1 Small Avocado
- ½ tsp Ground Nutmeg
1. Wash and cut broccoli into florets. Slice stems (peel stems if they are tough). Peel and pit avocado and cut into medium-size chunks.
2. Bring the bone broth to a simmer over medium-high heat in a good sized pot.
3. Add the broccoli and steam until dark green and tender, about 7-8 minutes.
4. Reduce heat to low. Add the nutmeg and avocado chunks to the pot. Continue to cook 3-4 more minutes, until avocado has warmed.
5. Puree with an Immersion Blender, or use a Blender
or Food Processor
, being careful not to burn yourself.

This looks delicious! I am fairly new to paleo and have had a hard time getting my kids to accept bone broth – but just today I managed to sneak some into a veggie puree soup that they already love (onions, chard, and chicken broth) so this recipe comes at the perfect time! I hadn’t thought about adding avocado. Definitely want to try this.

I’ve been dumping frozen veggies (brocc., caul, carrots) into a blender with water to make a quick soup, but it’s really bland. Then I started sauteeing onions in coconut oil and adding them. But avocado and bone broth will be great. Can’t wait to try it.

I am curious about the use of nutmeg here. Should we not include this if we’re trying to eat AIP? Probably would still taste great without I am thinking!
Vanessa, sarah has suggested Mace instead of nutmeg. I bought some and used it in the Plantain pancakes (which are wonderful) and the jar said use 1/4 tsp mace for 1 tsp nutmeg.
Sarah, would you mind putting a little note about freezability with the recipes… Just one line at the end – freezable or not freezable?
