Meatballs with Asian Dipping Sauce

As I try and incorporate more and more grass-fed meat into my family’s diet, I find myself experimenting more and more with ground beef recipes (since it’s the cheapest way to eat grass-fed).  This flavorful dipping sauce is based on homemade mayonnaise (didn’t I say that once you master the art of homemade mayonnaise that a whole new world of dips and sauces opens up?!).  See my recipe for Paleo Mayo for some extra tips on making mayonnaise at home.

Ingredients (Asian Dipping Sauce):

 

1.     Whisk garlic powder, cloves, cinnamon and fennel seed into soy sauce and fish sauce in a small saucepan.  Bring to a simmer over high heat, reduce heat to low and simmer 5 minutes.  Add honey and whisk to dissolve.  Remove from heat and let cool completely.
2.    Combine sesame oil, olive oil and avocado oil in a measuring cup (or other good vessel for pouring).
3.    Combine egg yolks, vinegar and mustard in a food processor or blender.  Blend on low speed until thick.  Slowly pour in oil mixture, blending continuously, until your mayonnaise is formed (should take 2-3 minutes to add all of the oil).  If you have a less expensive blender, make sure to give the motor breaks so that it doesn’t overheat your mayonnaise.
4.    Stir cooled soy sauce mixture into mayonnaise.  Refrigerate until meatballs are ready to eat!

 

Ingredients (Meatballs):

 

1.    Preheat oven to 400F.  Line a baking sheet with parchment paper.
2.    Heat coconut oil in a skillet over medium-high heat (cast iron is great here). Sauté chopped onion until soft and nicely browned.  Let cool.
3.    Grind pecans (if using) in a food processor or blender until the texture of coarse sand.
4.    Mix ground pecans and sautéed onion with ground beef, spices and egg.  I find it easiest to do this part with my hands.
5.    Form meat mixture into 1” balls and place on prepared baking sheet.  You should get about 20 meatballs.
6.    Bake for 14-16 minutes, until fully cooked.
7.    Serve with Asian dipping sauce and enjoy!

DROOLING over here. DROOLING. Asian dipping sauce makes my mouth water. I was wondering what we were going to have for dinner tonight with this ground beef I have defrosting. NOW I know!

Looks good! Do you have any suggestions for a little one that craves having salad dressing to dip her salad or carrots but cannot have acidic things (gets mouth sores) and is allergic to garlic and possibly other spirces? I’m not sure what else to give her to get her to keep eating the salad stuff.

Does she like guacamole? I make guacamole with just lime juice, fresh cilantro and salt (check for the recipe under snacks, not sure if the little bit of lime juice would be a problem or not). Some kids like to dip veggies in a little nut or seed butter too. Another option might be homemade mayo?

Thanks for the ideas. She didn’t like guac when we tried making it a couple times. No nuts in our family due to our allergies but I will try the homemade mayo. :)

I have successfully made vegan mayo using flax seed and coconut milk in place of the egg. It wasn’t bad. (I am not a vegan. Just off eggs for now. So many yummy recipes contain eggs… This one looks delicious!)

My husband is a hunter, and was very successful this fall, an elk and a moose. I am thinking of trying the meatball recipe using the ground elk or moose.

I just made this with ground turkey, I tripled the recipe, added 1 cup garbanzo bean flour, I like my meatballs a little drier, and it was fabulous! I liked it so much in fact, that I am making a second, triple batch!
