Chocolate Cut-Out Cookies (Nut-Free)

Cut-out cookies are so much fun to make with the kids!  I developed this recipe because we needed something “nut free” for all those places we go where we’re not allowed to bring nut products (not sure why coconut doesn’t count as a nut, since I’m pretty sure it technically is one, but I’ll roll with it anyway).  Makes: 40 cookies (depending on the size of your cookie cutters).

 Ingredients:

1.    Melt coconut oil and chocolate together in the microwave on medium power.  Let cool slightly.
2.    Mix honey, vanilla and eggs.  Add chocolate mixture, stirring well to make sure you don’t scramble the eggs.
3.    Add in coconut flour and stir very well.  Place dough in fridge to harden, at least 1 hour.
4.    Preheat oven to 350F.  Line a baking sheet (or two) with parchment paper.
5.    Roll dough out between two sheets of parchment paper to ¼“ thick.  Use your favorite cookie cutter to cut out shapes.  Place relatively close together on the cookie sheet.  Ball leftover dough together and roll out again.  Keep going until all the dough is used up.
6.    Bake for 12 minutes (adjust depending on the size of your cookies).  Let cool on cookie sheet or a wire rack.  Enjoy!

yes I have googled alot about coconuts to see where they originate and what I have found they are not a tree nut, which I am grateful since the reasoning for my search is my allergy to tree nuts….I have found out the hard way that things like Mangos being in the cashew family…go figure…..

I’ve been wondering about the whole “is a coconut a nut” thing too, and this is the most useful explanation I have found: “The word coconut itself can also be confusing because the word “nut” is contained in the word. A nut can be defined as a one- seeded fruit. With that loose definition, a coconut can also be a nut. However, a coconut is not a true nut. A true nut, such as the acorn, are indehiscent or do not open at maturity to release its seeds. The seeds are released when the fruit wall decays or are digested by an animal.”

Wow, this sounds so good: no sugar (expect whats in the chocolate), no milk ingredients, and even gluten free! Will we try making this for valentines day treats. Thank you so much!

Sorry but these are not good. I made a note to myself to add salt when I didn’t see it on the ingredients list but I forgot – I think it would have been a good addition – but may not be enough to make these worth making. It’s such a labor of love to make these as they are tedious….and a disappointment in the end. I found that after I rolled out the dough – placing the sheet of dough back in the fridge for a few minutes helped my get them off the parchment better.
We are used to very low sugar and coconut flour treats so that’s not what’s missing – they just have a very bland, almost burnt taste, leaving a bad aftertaste. I cooked them 9 minutes and they don’t looked overcooked. We added non paleo frosting to help save these – didn’t work.

I agree, these were edible, but not overly enjoyable, and incredibly tedious to make. There was definitely something missing, but I’m not sure what it was. We also tried to double the recipe which might have introduced more problems, since most things made with coconut flour do not scale linearly.

By the way, coconuts are not nuts. Not technically, or otherwise. It is technically a “drupe”, which is the same genus as a peach or nectarine. Interestingly, almonds are also considered drupes, not nut nuts. http://en.wikipedia.org/wiki/Coconut

Why does this post say “nut free” when there is coconut flour in the recipe? The FDA counts coconut as a tree nut. I have tree nut as well as coconut allergy. I wish most Paleo websites would understand that coconut flour is not safe for people like myself that are on the AIP to try and get better, but cannot make most of the very tasty looking treats, because coconut flour is not easy to substitute.

Yes. These were great. After reading some of the post about them being bland I decided to add 1/2 tsp. of peppermint extract. I’m new to Paleo so I don’t know if its ok to have this, but they were yummy.

I had a hard time with these. It turned out to be more of a brownie batter in the end I thought if it went into the fridge it would be better, I put them on the parchment and they were mushy, so I had to scoop it off and do drop cookies because it wouldn’t harden enough to roll, I baked and I thought they were ok, they would have been good making paleo ice cream sandwiches or putting some kind of fruit sauce making them into a cake type thing. My daughter on the other hand loved them so maybe she was being nice. She is 3 though so loves anything remotely sweet. :)

I made this cookies and they taste so dry :(, I used only 1/4 cup of honey since I don’t really need that much sweetness. Should I have added something else to compensate? Is the brand of the coconut flour really affects that much the result? I used Rob’s Red Mill (not the organic one)

Made these cookies for my mock “Oreo cookie”. Was very happy with the recipe. I modified it slightly. Added salt bc salt brings out the flavors. Used 1/4 cup palm nectar, 1/4 cup water and stevia to taste. Made a cream filling using coconut butter, honey and vanilla to taste for some and a paleo nutella for others….really good.

I made these with almond butter instead of chocolate (because my mom can’t have chocolate), and it was amazing! Awesome recipe!

Is there anyway to substitute some of the honey for something else? I find that when I eat goodies with a significant amount of honey, I feel sick. I’m sure it has to do with my glucose. Any suggestions?? THANKS!
