Broccoli-Banana Muffins (with chocolate chips)

Don’t be afraid.  You can’t taste the broccoli very strongly.  But it’s there, adding wonderful nutrition to these delicious muffins.  Both my girls adore these (the chocolate chips, maybe?) and, given that they normally think eating something green is akin to torture, I’m pretty pleased with my ability to slip some added nutrition into their diets.  A good option with these muffins would be to substitute chopped walnuts for the chocolate chips, if you like.  Makes: 12 muffins.

Ingredients:

 

1.    Preheat oven to 350F.  Grease a muffin pan (or line with paper muffin cups).
2.    Combine almond flour, coconut flour, baking soda and salt together in a small bowl.
3.   Blend bananas, broccoli and egg together in a blender, food processor or with an immersion blender.  Pour out into a large bowl.
4.    Add honey, coconut oil, vanilla, lemon juice and flax meal to banana-broccoli mixture.
5.    Add dry ingredients to wet ingredients and stir to combine.
6.    Scoop mixture into muffin pan and bake for 30 minutes.  Enjoy!

Your muffin recipes look awesome!!! My kids both eat broccoli relatively well too (which is maybe why this muffin is such an easy sell! It’s my 5-year old’s favorite). I’m totally going to start experimenting with cauliflower in my muffins recipes (great idea!).

Made them tonight with Almond meal instead of blanched almond flour, taste great and looking forward to experiment with the ingredients :D THANKS for sharing!!

I can only guess that your oven is hotter than mine. Try reducing the temperature 10 degrees. They are a soft muffin, but if they are still mushy, you might have higher water content in your banana or broccoli. You could try compensating with 1/4 cup more almond flour. I hope this helps!

I think so. The general rule for replacing almond flour with coconut flour is to use 1/4 the amount, so I would try 2/3 cups total coconut flour and go from there. Let me know if it works for you!

I used what I hand on hand: Only one ripe banana. a cup of frozen spinach (instead of brocoli) and a cup of blueberries (instead of chocolate chips) DELICIOUS :) Thanks so much for your website. You are very inspiring

Just made these muffins with your modification of 2/3 cup of coconut flour (total) instead of almond flour because my daughter is allergic to tree nuts. They turned out moist and delicious! Thanks so much for all of your hard work at making these tasty treats!

I made these last night with your modification of 2/3 cup of coconut flour (total) instead of almond flour as I don’t really care for almond flour. I am trying to get more veggies into my son, but knew he’d be suspicious if he saw any green, so I added 1/4 cup cacao powder to cover the green and they turned out great! Still very moist, almost like a brownie (but not chewy) and my son likes them! Thanks for all your work here, I frequent your site and use a lot of your recipes!

I”m wondering if i can use all almond flour and cut out the coconut? My daughter doesn’t seem to do well with anything coconut and so i try to make things both kids can have. I LOVE that i can sneak a veggie in as my son doesn’t eat as much as he should.

Can I replace almond meal for coconut flour? If so, how much coconut flour? My kid’s school is “nut free” so I can’t send anything made with nuts in her lunchbox…which sucks since most of the Paleo sweet treats are made with almond meal. Any thoughts? Thanks!!

These are the most delicious muffins ever! My vege refusing boy gobbled them up! Also made a version replacing broccoli and choc chips with grated carrot and cranberries which also went down a treat – thank you so much!!

My daughter (who is 4) and I just made these. She loved them. Although we subbed vanilla for almond for a more cherry taste. Thank you so much for these.

I couldnt resist a comment– Ive been reading & learning abt Paleo while experimenting with some recipes. I found this one, was skeptical but will try anything to get my little ones to eat veggies. HOLY MOLY! Im truly delighted :) After reading the recipe and the wonderful comments I made some adjustments based on things I had in my cabinets–

I used only coconut flour (the recommended 2/3c), I only had abt 1c fresh broccoli that I steamed, so I decided to add abt a cup of fresh spinach. Unsure my little one would go with the green color I used the 1/4c unsweetened cocoa another mom recommended. Then only to find I didnt have any flax meal, I used almond meal instead (not sure if changed things).

All in all everything ended up delicious! My daughter was delighted abt the special treat, and I was happy to see her gobble it up. I would love to see more recipes like this “hidden veggies” and will be definitely trying the suggested modifications above.

I just had to share as my thoughts and skepticism was totally debunked with the wonderful smell and delicious taste of the muffins!

First, I hate broccoli….that said, I LOVE these muffins (my whole family does)! Great recipe :-) I usually substitute craisins for the chocolate chips.

These are awesome. I use a mix of broccoli, cauliflower and sometimes carrots. And after the first time I halved the honey and they are still quite sweet. My toddler who can be picky loves them! Oh and I don’t add chocolate either, with just the fruit, veggie, and honey they are delicious.
